Tomorrow is the big day. Super Bowl Sunday grubbing. I cannot wait. This recipe, from The Pioneer Woman, is a perfect thing for your football watching extravaganza. I have made this many, many times. It never fails to be moist and tender and crazy easy to make. 5 ingredients. That is it. Can you pour? Can you put a big slab of beef into a pot? Then you can make this. This needs to be made the day before you are going to eat it. The flavors hang out and become friends. Really, really good friends.
The meat just falls apart. You use a fork and it shreds all on its own. Toast some sub rolls and grab some slices of cheese. I really like the spicy pepper jack with this, but use whatever you have around. The sandwich of your dreams.
chuck roast (mine was about 4 pounds)
pepperoncini
beef consomme or beef broth
Italian seasoning
salt
sub rolls
provolone cheese or pepper jack cheese
Grab yourself a big pot (one that can go in the oven) and put the chuck roast in it. Cover it with 4 tablespoons or so of Italian seasoning.
Cover the chuck roast with beef consomme and a half cup of water.
Put half the jar of pepperoncini on top. Pour out some the juice from the peppers as well. Season with salt.
(I know that it does not look very appetizing right now, but I promise you it is delicious.) Cover the pot and cook for 5 to 6 hours in a 275 degree oven. (You can also cook this in the slow cooker or slowly simmered on the stove). The beef should be falling apart. If it isn't, keep cooking it until it does. When the beef is done, cool it down and put it in the fridge overnight. The fat will harden and skim it from the top.
Put the pot on the stove and heat on low to medium to heat through. If you need to, add more beef broth or water and add more liquid.
Toast a sub roll.
Cover the toasted roll with the shredded beef and a few peppers.
Cover with a few slices of cheese.
Put the sandwich under the broiler until the cheese melts.
How good does this look? Serve with some of the cooking liquid on the side for dipping.

We tried this recipe too a little while ago. I love how easy it is and it was delicious! It was a bit spicy for my family, but I think that's because we're pretty wimpy when it comes to spicy stuff. It was still very yummy!

This is a family favorite that I make in the crockpot. I also like to toss in a chopped onion and some mushrooms:-) I've also been known to take the leftovers and give them second life by adding carrots and potatoes to make a stew. Delicious!

I make something very similar to this! I call it brisket tacos though! I put a jar of the peppers, 1 dry packet of italian seasoning, 4 beef bullion cubes, onion, and some water in a crock pot. I serve it on tortillas. It's very very yummy!

I'm not a fan of pepperoncinis, but it looks like they might be good if i just didn't add any to the sandwich itself. But really I wanted to say how much I love your site! When I'm googling for recipe ideas, it seems like I consistently end up back here and everything I've made has been great. You're definitely my go-to site for a recipe that I can count on to turn out well the first time I make it. Over the holidays I had to host a party for ~75 people and used 5 or 6 of your recipes- each one turned out great and I had a lot of requests for the recipes. Keep up the great work 🙂

This recipe is alive and well all these years later! I make this as part of my monthly rotation. My family LOVES it! I posted a picture recently and had a bunch of friends ask for the recipe, so of course I passed it along. This has become one of our families favorite recipe. The meat is so tender and there is something about cooking it low and slow in the oven that makes is so much better than cooking it in a slow cooker.
