It's happening! It's ruby-red season and I'grand 100% fix. I've been waiting for 11 months for this and I cannot be stopped. Grilled Ruddy Flatbread

- one tablespoon olive oil plus more for brushing
- 2 yellow onions thinly sliced and caramelized
- ½ cup cherries halved
- one cup bloomsdale spinach
- Kosher common salt and freshly cracked blackness pepper

- six ounces goat cheese at room temperature
- Pinch of crunchy ocean salt such every bit Maldon

Fix a gas or charcoal grill to high estrus. Brush the grill with a bit of oil.
